one medium sweet yellow onion
Peas to your taste
2 tbl. honey
at least three tablespoons of cider vinegar, and extra
3/4 tsp cinnamon
3/4 tsp chili powder
salt
pepper
1 tbl butter
1/4 cup water
Coat the pan with olive oil; heat on high medium. Cook the potatoes until nicely browned. Add water, butter, onions, and a couple splashes of vinegar. Cover and cook until almost tender. Mix vinegar, spices, and honey to taste, and add it to the pan in the final few minutes of cooking. Add the peas, cook until tender.
I also add about 1/2 of a bag of Quorn Tenders at the time I add the onions etc.

These measurements are pretty much guesses since I don't much measure when I make this.
1/4 of a ginormous watermelon
about 2 C of fresh pineapple
1/3 of a Vidalia onion
1 jalepeno (with about 1/2 the seeds/ribs)
several squirts of lemon juice
a few shakes of tabasco
1/4 t chipotle powder
2T balsamic vinegar.
a big handful of fresh cilantro
If you don't like things that spicy, leave out all the ribs and seed of the jalepeno, or the whole dang thing, and only give a couple shakes of tabasco.
The watermelon is the base of this and I just added the pineapple for fun, but you could also add mango or if you had some good, firm peaches...
