2 big handfuls of brussel sprouts, halved
1 large yellow onion, roughly chopped
1/2 of a red pepper, roughly chopped
3 large beets, peeled and chopped
8 medium baby red potatoes, chopped
1 Honeycrisp apple, cored and chopped
5 cloves of garlic, smashed
I put all of that in a foil lined baking pan, then poured in... about a 1/4 cup? of olive oil (just enough to coat), some balsamic vinegar, a good bit of kosher salt, a dash of ground cayenne pepper, about 1/2 t chili powder, and about 2 T garam masala.
Stir that all up with your hands until it's well mixed, then bake that badboy for about 75 minutes at 425 F (or until all the veggies are tender). The apple will probably cook down to nothing, but it adds a sweetness that is awesome.
